Ingredients
For the pork leg
1 whole skin-on pork leg, about 3 kg
2 tbsp honey
1 tbsp balsamic vinegar
3 tbsp mustard
Juice and zest of 2 oranges
1 sprig rosemary
2 sprigs rosemary
Salt
Pepper
For the potatoes
1½ kg baby potatoes
2 cloves garlic, 1½
Juice of 2 oranges
Juice of 1 lemon
1/2 cup olive oil
2 tbsp mustard
Salt
Pepper
For the pork leg
Take the pork leg out of the refrigerator and let it come to room temperature for at least 1 hour.
Place it in a roasting pan and use a sharp knife to score the fat on the outside in a diamond pattern.
Pour over the orange and lemon juice.
Add salt and pepper and rub them over the pork leg.
Add the rosemary and orange peels to the pan.
Cover the pork leg with parchment paper and aluminum foil. Place it in the oven.
Roast in a well-preheated oven at 200ºC, using conventional heat, on the lower rack, for 1 hour and 30 minutes.
After 1½ hours of roasting, uncover the pork leg and add the potatoes, the unpeeled garlic, and all the liquid left in the bowl.
Mix the honey with the balsamic vinegar and mustard.
Brush the pork leg with the mixture, lower the oven temperature to 170ºC, and continue roasting for 1 hour and 30 minutes, until the skin is crisp and the potatoes are glazed.
For the potatoes
Peel and wash the baby potatoes.
Place the whole, peeled potatoes in a bowl.
Add all the orange and lemon juice, olive oil, mustard, salt, and pepper.
Mix the potatoes very well with the remaining ingredients.
Tips
The oven takes quite a while to preheat using conventional heat.
Once the oven reaches the desired temperature and you put the pan inside, start timing the cooking from that point.
Good luck!
