Ingredients
1 boneless beef steak
1 tbsp olive oil
1 clove garlic
1 sprig thyme or rosemary
salt
freshly ground pepper
a small piece of butter
For the sandwiches
2 large red onions
25 g butter
1 tbsp olive oil
2 tbsp brown sugar
salt
pepper
50 ml wine vinegar or balsamic vinegar
2 ciabatta rolls
a little olive oil
mustard
sprouts
For the steak sandwich
First, prepare the caramelized onions. Choose large red onions, peel them and remove the first layer. Using a sharp knife, cut them into thick rings about 1.5 cm wide.
Heat the olive oil and butter, then sauté the onions for the steak sandwich for 3 minutes.
Season lightly with salt and let them soften.
Add the sugar and stir until it dissolves. Add the vinegar, lower the heat, cover the onions and let them caramelize and soften for about 20 minutes.
Adjust the salt and pepper at the end. Sprinkle with a little thyme.
Take the steak out of the refrigerator half an hour before cooking.
Season the meat all over with salt and pepper.
Heat a nonstick pan over high heat until very hot. Rub a little olive oil all over the steak and cook it in the hot pan for about 3 minutes on each side.
Add a crushed garlic clove to the pan, let it infuse for 1 minute, then remove it.
If you prefer your meat well done rather than medium, cook it for an additional 2 minutes on each side.
Finally, add a little butter to the meat and spoon it over the steak as it cooks.
Transfer the beef steak to a plate, cover it and let it rest for 4-5 minutes.
Then slice it. Be sure to reserve all the steak juices.
Open the ciabatta rolls in half without cutting all the way through. Put them in the oven for 4-5 minutes to warm up. While the rolls are still warm and open, dip them in the steak juices that collected while the meat was resting.
Spread mustard on the rolls and divide the caramelized onions evenly between them. Add the juicy steak and plenty of sprouts.
Close the steak sandwiches and serve immediately.
If you like, add melting cheese while the ingredients are still hot, sautéed mushrooms or salad leaves.
Enjoy!
