Why can chicken dry out? 5 simple ways to keep it juicy

Chicken is one of the most popular and versatile meats in Greek cooking. It can be roasted in the oven, fried in a pan, cooked in a pot or an air fryer, and made into soup, pie, lemon chicken, or even gyros. It's light, nutritious, and loved by young and old alike.

But... if there's one thing that's happened to almost all of us, it's cooking chicken only for it to turn out dry, tough, and bland.

Why does this happen? And most importantly, how can we avoid it?

If you're new to cooking or simply want to improve your everyday meals, read on for the 5 easiest and most effective ways to keep your chicken juicy and delicious every time.

Why does chicken dry out?

Chicken - especially breast - is naturally lean. This means it has less fat than other cuts, such as thighs or wings. If overcooked or cooked without the right steps, the meat tightens and loses its natural juices, making it tough and dry.

The most common reasons are:

  • Cooking it for too long

  • Too high a temperature

  • Incorrect cutting or preparation

  • Not marinating it

  • Cutting it immediately after cooking without letting it rest

Luckily, with a few simple tips, you can avoid all this and take every chicken dish to the next level.

5 easy ways to keep chicken juicy

1️⃣ Choose the right cut for the right cooking method

Every cut of chicken cooks differently:

  • Breast: It cooks quickly and needs attention so it doesn't dry out. Ideal for quick meals, stir-fry, schnitzel, or dishes with sauce.

  • Thighs / Wings: They have more fat and stay juicier, especially when roasted in the oven or cooked in a pot.

  • Whole chicken: It needs to cook more slowly to cook through properly and stay tender.

Tip: For the perfect balance of flavor and texture, try combining breast and thigh in the same dish.

2️⃣ Use a thermometer - and stop saying “just a little longer to be safe”

The most common mistake is overcooking it for fear of it being “undercooked.”
But that has the opposite effect - it dries out.

Use a cooking thermometer and take the chicken out when the internal temperature reaches:

  • 70°C for breast

  • 75°C for thigh

If you don’t have a thermometer, learn to trust the color and texture: the meat should be white inside but not dry and without pink juices.

3️⃣ Marinade: Your best friend

A good marinade helps tenderize the meat, absorb flavors, and “lock in” moisture.

Ideas for simple and effective marinades:

  • Yogurt + lemon + mustard + oregano

  • Olive oil + balsamic vinegar + honey + thyme

  • Orange juice + soy sauce + garlic + ginger

Marinating time: 30 minutes to 2 hours is enough. If you have more time, even better, but don’t leave it overnight if it contains a lot of acid (e.g., lemon), as it may start to “cook” prematurely.

4️⃣ Let it rest before cutting

When you take the chicken out of the oven or pan, don’t rush to cut it.

Let it rest for 5–10 minutes. During this time, its juices will settle inside and won’t “spill out” when you cut it.

How do you do it?
Remove it from the heat, place it on a cutting board or plate, and loosely cover it with aluminum foil.

5️⃣ Cooking with fat or in a moist environment

If you’re cooking skinless breast or lean cuts, add a little olive oil or butter while cooking.

Alternatively, cook it:

  • in parchment paper for more protected roasting,

  • in a sauce (tomato, lemon, béchamel, etc.),

  • or in a pot with a little water or stock for slow, safe cooking.

Fat helps keep the meat from drying out and adds depth of flavor.

Conclusion

You don’t need to be a chef to make juicy, aromatic, perfectly cooked chicken.

All you need to do is:

  • choose the right cut,

  • cook it at the right temperature,

  • marinate it properly,

  • let it rest,

  • and give it a little “care” with fat or sauce.

With the right ingredients on hand, success is almost guaranteed!
