Red pepper first arrived in Spain in the 16th century, brought by Columbus after his great voyage to the Americas. Peppers had been cultivated in North America and central Mexico for many centuries, but the Spanish were the first to dry and grind these red fruits to make the spice we know today as paprika. Sweet paprika comes from mild, sweet varieties of Capsicum annuum.
Sweet paprika is a spice used around the world to add color and flavor to a variety of recipes. In the Balkan countries in particular, paprika is used to add a red color to soups, sauces, and marinades.
Sweet paprika is an excellent spice to add at the end of a recipe, as overheating it during cooking makes it taste bitter. It can be used in recipes with chicken, pork, and beef, as well as in vegetable and potato dishes grilled or roasted in the oven. Sweet paprika adds a refined, earthy flavor to rice dishes, omelets, soups, and tomato sauces. It can also be added to ground meat for sausages and burgers while mixing.
Sweet paprika goes well in yogurt dips and salad dressings. It can also be sprinkled over white cheese, such as feta, for example.
