Περιγραφή
Coriander is an herb from the Apiaceae family, which includes 3,700 species such as carrots, celery, and parsley. All parts of the plant are edible, but its fresh leaves and dried seeds are commonly used in cooking. Its cultivation dates back at least to 1500 BC, as Sanskrit writings from that time attest.
Its seeds were found in the tombs of Egyptian pharaohs and in ruins of Ancient Greece dating from the Bronze Age, around 5,500 years ago. It is estimated that 4% to 14% of people cannot stand the taste of coriander, not because they are odd, but, according to scientists, for genetic reasons. Coriander contains aldehyde, a compound that a gene in these people makes them perceive as soap or insecticide.
Others find its intense, soapy yet balanced flavor, with pleasant, fresh, citrusy notes, particularly addictive. Health benefits: It helps reduce anxiety. With long-term use, it has been shown to remove mercury from our tissues.
It is one of the very few herbs that can help remove heavy metals from the body, especially mercury, aluminum, and lead.
Because of these properties, its use as a natural water filter is being studied, and it is included in many “detoxifying” juices and drinks. Its natural oils contribute to gut health. It helps with eye disorders, red eyes, and macular degeneration. It prevents urinary tract infections. The vitamin K it contains helps maintain healthy bone structure and limits neuronal damage in the brain, thereby helping prevent Alzheimer’s disease. It prevents anemia by contributing to blood formation.
Its leaves and stem tips are also rich in flavonoids such as quercetin, kaempferol, rhamnetin, and apigenin, which are antioxidants. When juiced and consumed regularly, it may help reduce the amount of lipid peroxides in cell membranes. It acts as a natural diuretic, protecting against kidney stones. It lowers LDL cholesterol and regulates blood pressure and heart function. Dodecanal, a compound found in its leaves and seeds, has been found to have antibacterial activity against salmonella.
Coriander seeds are used in curry dishes, curry powder itself, pickles, sausages, soups, stews, and briam. itrofi.gr suggests adding its fresh leaves to sauces and salads, or adding them toward the end of cooking so they do not break down in various stews. You may also enjoy its citrusy flavor in your fruit salad.
