Winemaking for the Thymiopoulos family began in 2000, with different vineyard practices applied according to the microclimate and vintage, along with corresponding experimental vinifications, to determine each vineyard’s potential and how best to work with it. In 2004, the first bottled wine from their own winery was released. The wine is aged in oak barrels in the winery’s underground cellar, while the fresh wine is left on its lees for almost 10 months.
