A fresh, easygoing everyday wine with a striking pale green color, an exceptionally intriguing and complex nose, captivating floral aromas of jasmine and honeysuckle, finesse on the palate, lovely acidity and a beautiful finish... Very elegant and perfect for any occasion, it can be enjoyed as an aperitif, but also pairs beautifully with grilled seafood, seafood pasta and all kinds of grilled fish.
Kydonitsa is Laconia’s most distinctive white grape variety, and no one makes wine from it with greater skill and passion than Theodorakakos Estate. It produces exceptionally interesting wines with quince-like aromas, deserving a place among Greece’s finest wines and a trajectory to match Assyrtiko.
Production process: Harvest in early September. Hand-picked into small crates. Six-hour pre-fermentation maceration at low temperature in a reductive environment to better preserve the variety’s aromatic potential; only free-run juice is selected, followed by static settling, low temperature throughout fermentation at 12°C, two months’ aging on fine lees and bottling.
Tasting notes: Bright, pale yellow color with green highlights. The nose opens with fruity aromas of unripe quince, pear and citron, framed by notes of lemon blossom, acacia, eucalyptus and fern. A palate with lemony acidity, refined fruity aromas and a lingering finish.
Food pairing: Serve at 10-12 °C. Pairs with fried and grilled fish, shellfish, pasta with seafood or white sauces, Mediterranean vegetable dishes cooked in olive oil, richly aromatic cheeses and salty cured meats.
