🥩🇬🇷 Flank from Greek Organic Heifer
Greek Organic Heifer Flank • Lean & Flavorful • Ideal for Pot & Oven • Clean Taste
Flank from Greek Organic Heifer is a classic, honest cut with authentic flavor and a clean profile. It comes from a Greek organically raised heifer, which gives the meat a finer, more balanced flavor and a quality that comes through in the finished dish. It’s a cut that loves slow cooking: it turns out wonderfully in a pot, braised in tomato sauce or lemon sauce, with vegetables, and in the oven, too, where it makes a rich, thick sauce and plenty of delicious juices.
An ideal choice for those who want hearty, nourishing, home-style beef, with a focus on quality ingredients and Greek origin.

🔥 Cooking Method
Pot (tomato-braised / lemon-braised)
1️⃣ Sear the chuck flap in a pot with a little olive oil.
2️⃣ Add onion/garlic and deglaze with wine or water.
3️⃣ Add tomatoes or lemon (depending on the recipe) and herbs.
4️⃣ Simmer for 90–150 minutes, until tender and the sauce thickens.
Oven (braised in a roasting pan)
• Roast at 170–180°C until tender, with liquid in the pan to prevent it from drying out.
✅ For food safety, aim for an internal temperature of ≥ 75°C.
💡 Chef Tips
• Chuck flap takes time: low and slow for tenderness.
• For a richer sauce, let the dish reduce for the last 10–15 minutes without a lid.
• Pairs perfectly with bay leaf, allspice, and a little wine.
🍽️ Pairings & Serving
Side dishes: potatoes, mashed potatoes, rice, hilopites, kritharaki, pasta.
Salad: cabbage and carrot or green salad.
Wine: medium-bodied red.
🧼 Safety & Handling
• Keep refrigerated until cooking.
• Avoid cross-contamination (keep raw meat away from ready-to-eat foods).
• Cook thoroughly before serving.
