🔥 Cooking Instructions
❗ The product is not ready to eat — it must be fully boiled / cooked before serving.
For Magiritsa & Boiled Dishes
1️⃣ Preparation
• Rinse the meat well under cold running water.
• If you want a clearer broth, you can blanch it for 2–3 minutes in boiling water and discard the first water.
2️⃣ Basic Boiling
• Place the lamb leg in a pot with cold water, covering it completely.
• Add salt, pepper, and vegetables (carrot, onion, celery, or celeriac).
• Once it comes to a boil, reduce the heat to medium-low.
• Skim the broth thoroughly so it becomes clear and transparent.
3️⃣ Cooking Time
• Boil for approximately 1,5–2 hours, until the meat is tender and comes easily off the bone.
4️⃣ For Magiritsa
• Use the broth and some of the meat as a base.
• Add rice, dill, spring onion & make a classic egg-lemon sauce at the end.
5️⃣ For Boiled Dishes / Soup
• Add vegetables (potatoes, carrots, celery) during the final 40 minutes.
• Adjust the salt, pepper & lemon before serving.
💡 Chef's Tip:
Let the broth cool slightly and remove some of the fat from the surface if you prefer a lighter result. You can use the rest in other recipes (e.g., roast potatoes).
