Spit – Charcoal

• Insert the spit through the hole in the tube
• Start on low heat for 20–30 minutes
• Continue over medium heat for 1:30–2:00 hours
• For the last 10–15 minutes, turn up the heat slightly for a golden color
• Brush with oil, lemon, and oregano if desired

For an even juicier result, cover with a thin layer of aluminum foil for the first 30’ if the heat is high.
