About the Scorpion Steak. Although it is not a traditional cut of meat, it is a distinctive preparation that combines a specific cut with a cooking technique.
Origin and Characteristics
The Scorpion Steak was created by chef Eric Gephart and introduced at the World Food Championships in 2018. It is a variation of the Tomahawk cut, in which the meat is butterflied along the bone, creating an appearance that resembles a scorpion.
Preparation Process
-
Choosing the Cut: A Tomahawk steak is used, which is essentially a ribeye with an extended rib bone.
-
Butterflying Technique: The meat is cut lengthwise so that it opens up and spreads out, with the bone remaining in the center.
-
Marinating or Seasoning: The desired marinade or seasoning is applied to the meat.
-
Cooking: Grill or roast it in the oven until it reaches the desired internal temperature.
-
Presentation: It is served with the bone protruding, creating an impressive appearance that resembles a scorpion.
Cooking Method
-
Grilling: Grill the meat over medium-high heat, ensuring a nice crust forms on the outside while the inside remains juicy.
-
Oven: You can start cooking at a high temperature to create a crust, then continue at a lower temperature until it reaches the desired internal temperature.
Storage
-
Raw Meat: Store it in the refrigerator at 0-4°C and consume within 3-5 days.
-
Cooked Meat: After cooking, it can be stored in the refrigerator for 3-4 days or frozen for longer storage.
