🔥 Cooking Method (classic Tas Kebab)

1️⃣ Lightly pat the meat dry and brown it over high heat.
2️⃣ Add onion and sauté until softened and glossy.
3️⃣ Optionally deglaze with wine or a little water/stock.
4️⃣ Add tomato/tomato paste and spices (allspice, bay leaf, cumin, pepper).
5️⃣ Simmer covered for 60–120 minutes, until tender (depending on the cut and the pot).
6️⃣ Let it rest for 5–10 minutes before serving.
