Beef stifado is one of those much-loved dishes that brings family meals to mind. With the right steps, you can make a stifado with rich flavor and tender meat.
1. Choosing the Cut of Meat
For stifado, choose cuts such as shoulder, chuck or shank. These cuts are ideal for slow cooking, as they become tender and develop a distinctive flavor.
2. Ingredients
1 kg beef
1 kg small onions for stifado
Grated tomatoes or tomato sauce
Red wine, cinnamon, cloves, bay leaf, garlic and beef stock.
3. Preparation
Onions: Sauté the onions in olive oil until softened and golden.
Meat: Sauté the beef until it develops a browned crust.
4. Cooking
Place the meat, onions and remaining ingredients in a pot. Simmer over low heat for 2-3 hours, adding stock gradually if needed. Slow cooking is the key to tender meat.
5. Variations
Add potatoes or chestnuts for extra texture. A pinch of sugar in the sauce will balance the acidity of the tomatoes.
6. Serving
Serve the stifado with rice or pasta and a glass of red wine.
