A simple guide for anyone who wants to try something “special” at home
Chicken is the king of poultry. We all know that.
But if you want to try a more sophisticated, aromatic and distinctive dish, then duck and duck breast are among the loveliest options you can bring to the family table.
The good news? They’re not as difficult as you think.
With a few basic guidelines, you can cook a truly gourmet meal… at home.
✔️ What to know before you start
Duck has:
- more fat
- a more pronounced flavor that pairs well with fruit, honey and herbs
- shorter cooking times, especially for duck breast
How to cook a whole duck
Perfect for a dinner party, Sundays, holidays, or a gathering.
✔️ The simplest method: Roasting in the oven
Duck turns out best when roasted at a low temperature for a good while, allowing the fat to render and the meat to become more tender.
Basic steps
- Lightly score the skin (without cutting into the meat).
- Season all over with salt and pepper.
- Stuff the cavity with orange, apple and thyme (or nothing at all—it’s delicious plain, too).
- Roast at 160°C for 1.5–2 hours.
- At the end, increase the temperature to 220°C for 10–15 minutes to crisp the skin.
2. How to cook duck breast
✔️ The basic method: Pan-sear, then finish in the oven
This technique gives you:
- crispy skin
- a pink, juicy interior
- perfectly balanced flavor
Step 1 — Preparation
- Score the skin in a diamond pattern.
- Season well with salt and pepper.
- Don’t use oil (duck renders plenty of its own fat).
Step 2 — Pan-searing
Place the breast skin-side down in a cold pan without oil.
Turn the heat to medium.
After 6–8 minutes, the fat will have rendered and the skin will be golden.
Step 3 — Finishing in the oven
Turn the breast over and cook for 1 minute, then transfer the pan to a preheated oven at 180°C for 6–8 minutes.
For medium → 6 minutes
For well done → 10 minutes
Step 4 — Resting
Let it rest for 5 minutes before slicing thinly.
